nordpol has been a leading Austrian traditional brand in the area of confectionery and baked goods since 1953. For decades, bakers, confectioners and many bulk purchasers have placed their trust in the company's products for professionals: from couvertures, wafers, glazes, nougat and fondant and marzipan, to products for ice cream production.
 

Decades of experience

As the name indicates, nordpol started out in 1953 with an icy business – namely production of ice-cream powder and all associated products having to do with ice cream. The family business was gradually expanded, and the product range was extended to include marzipan, fondant, couvertures, icings, etc. – but the familiar brand name was retained. With its decades of experience and the extensive product range, nordpol became a renowned solution provider on the Austrian wholesale market and for bulk purchasers, for bakers, restaurateurs, confectioners and sweets manufacturers. Following restructuring of the Salzburg Schokolade Group, in 2015 the nordpol plant was relocated from Vomp in Tyrol to Grödig, where the entire range of products for our professional partners is now produced at one location – quality made in Salzburg.

Tips & tricks

Storage of fondant

Fondant should be processed quickly in order to prevent drying out. Leftover fondant should be stored in a tightly sealed container in a cool, dry place (not in the refrigerator).

Working with couvertures

The proportion of cocoa butter in the couverture determines its viscosity. The more cocoa butter it contains, the harder the couverture. The less butter, the softer it is for working with.

We indicate the viscosity of our products with a point system.
